Vangibath (Brinjal Rice)/ Egg Plant


Ingredients:


  • 1 cup of cooked rice
  • 3 Brinjal
  • Vangibath powder
  • 2 tbsp cooking oil
  • 1 tbsp cashew
  • 1 tsp ground nuts
  • 1 tsp mustard
  • 1 tsp chana dal
  • 1 tsp urad dal
  • Curry leaves
  • 3-4 red dried chili
  • 1 onion, sliced
  • 1/4 tsp turmeric
  • 1 tbsp tamarind plum
  • 1 tbsp coriander leaves


Preparation:


Step 1: In pan, add cooking oil, mustard seed, ground nuts, chana dal, urad dal, red chili, curry leaves, sliced onion and chopped brinjal. 


Step 2: Sauté for a while.





Step 3: Further add turmeric powder and salt as per taste.


Step 4: Mix the vangibath powder and stir well.





Step 5: Cover the lid, make sure brinjal should be cooked properly. Next add tamarind plum.


Step 6: Next add portion of rice and mix well, garnish with coriander. And serve it.
